½ bunch of flat parsley
1 red onion
2 tablespoons olive oil
½ lemon
100 g cashew nuts
Olive oil
½ pomegranate
100 g feta cheese

Roadmap

  • Set the oven to 250 degrees.
  • Place the peppers in an oven dish and roast until tender.
  • Turn them every now and then. Do not worry if the bell papper skin turns black: you can remove it afterwards.
  • Let the peppers cool down.
  • Slice the peppers and put them in a bowl.
  • Drain the chickpeas and add them to the peppers.
  • Season with pepper and salt.
  • Chop the onion and finely chop the parsley.
  • Add the olive oil to the mixture along with a few drops of lemon juice. Stir everything together.
  • Roast the cashew nuts in a pan and add them to the salad.
  • Finish with pomegranate seeds and crumble some feta over the salad.
