12 cherry tomatoes

2 colored tomatoes

2 old slices of bread

1 lime

1 jar of sour cream

2 shallots

150g peeled gray shrimp

Olive oil

Vinegar

Pepper

Salt

Roadmap

Peel 4 purple cocktail tomatoes and season them with salt and pepper. Add some olive oil and put them in the oven at 100°C for an hour.
Peel 6 cherry tomatoes, cut in half along with the rest of the cherry and purple cocktail tomatoes.
Cut the bread into cubes and fry them crispy in plenty of olive oil.
Slice and portion the colored tomatoes.
Finely chop the chives.
Put the sour cream in a piping bag.
Finely dice the shallot and add white wine vinegar, olive oil and salt.

Dressing

Place the slices of colored tomato on the bottom, squirt a few dabs of sour cream on top.
Dress all other tomatoes above. Try to work in height.
Pipe back a few dabs of sour cream.
Spread the shallot over this and season with salt and pepper.
Spread the shrimp on top and finish with chives, the bread crusts and some lime zest.
