200 g strawberries

Roadmap

Mix the egg yolks with the sugar to a ruban (= a smooth and airy mixture in which the egg yolks start to colour lighter).
Flavour the ruban with the vanilla extract.
Mix the ruban with the ricotta.
Cut the bread slices and fry them briefly in the pan with a knob of butter and some honey to caramelise them.
Brush the toasts with the sweet ricotta mixture.
Slice the strawberries and divide them between the toasts.
Finish with some extra honey and thyme.
