4cl lychee juice (from a can)

A few drops of rose essence (Orphan brand)

1 red chili pepper (coarsely chopped, without seeds)

200g strawberries

20cl gin (preferably Spring Gin Black Pepper)

4 bottles of tonic (Schweppes Pink Pepper)

For finishing

100g watermelon balls (you make these with a parisienne drill)

4 basil leaves

4 slices of lime

4 stalks of lemongrass

4 sage leaves

8 mint leaves

Crushed ice

Roadmap

Blend the strawberry puree, rhubarb juice, lychee juice, rose essence and chili pepper in the blender or with the hand blender to make a coulis.
Take 4 glasses and fill them with ice (crushed ice or ice cubes). Put in each glass 50g of strawberries (cut as you wish) and ¼ part of the coulis.
Further garnish the glass with the watermelon balls, basil, lime, lemongrass, sage and mint.
Divide the coulis among the 4 glasses. Serve with desired amount of Spring Gin Black Pepper and the Schweppes Pink Pepper tonic.
