Strawberry Nests with Burrata & Basil Oil

4 sheets of filo pastry
2 tbsp melted butter or olive oil
For the filling and basil oil
250 gr fresh Hoogstraten Strawberries (quartered)
2 bulbs of burrata
2 tbsp. roasted hazelnuts, coarsely chopped
Fresh mint leaves
Zest of 1 lemon
Pepper & fleur de sel
1 bunch of fresh basil
100 ml of mild olive oil
1 clove of garlic
Pinch of salt

Roadmap

The nests:

  1. Preheat the oven to 180°C.
  2. Lightly grease muffin tins. Cut the filo pastry sheets into squares and line each mold with 2 layers of dough, lightly brushing each layer with butter/oil.
  3. Bake 8-10 minutes until golden brown and crispy. Let cool in the mold.

 

The basil oil:

  1. Blend basil, garlic, oil and salt into a smooth green oil.
  2. Sift for a bright finish, or leave it more rustic.

 

The finishing touch:

  1. Fill each nest with pieces of strawberry and tufts of burrata.
  2. Drizzle basil oil on top.
  3. Finish with hazelnut, lemon zest, pepper and fresh mint, if desired.
  4. Serve immediately, keeping the filo pastry crisp.
