200g melted butter (lukewarm)

1 pinch of salt

Mix the yeast with milk and water. Beat the egg yolks with a whisk or in a food processor until frothy and add to the mixture.
Add the flour and beat the batter lightly with a whisk.
Next, beat the egg whites with a whisk or in the food processor to a white foam and carefully spat into the batter.
Add butter and a pinch of salt. Cover dough with a damp towel and let rest for 45 minutes.
Using a ladle, scoop the batter into a hot waffle iron.
Bake the waffles until golden brown.
Serve with jam and whipped cream.
