Preheat the oven to 180°. Cut the potatoes and cherry tomatoes into 2. Place in a baking dish with a splash of olive oil. Season with the herbs. Put the baking dish in the oven for about 30 min.
Coat the steak with olive oil and season both sides with salt and pepper. Press the herbs well into the meat for an extra crispy crust. Fry the steak in a hot pan with a dash of olive oil. After frying, let the meat rest for a while before cutting it.
Cut the sirloin steak into strips. Top with chopped chives. Serve with the potatoes and tomatoes.
