6 roma tomatoes

150g miss perfect tomatoes

1 onion

2 eggplants

1 can of diced tomatoes

2 cloves of garlic

60g toasted almond flakes

150g black olives

handful of leaf parsley

handful of fresh basil

Herbs

1/2tl paprika

1tl dried oregano

1/2tl chili flakes

salt and pepper

Roadmap

Finely chop the onion and garlic and sauté in olive oil.
Dice the tomatoes and stew with them.
Cut the miss perfect tomatoes in half and add these as well.
The miss perfect tomatoes will provide a slightly sweet touch.
Season to taste with all the dry spices.
Cut the olives in half and add them to the sauce.
Then deglaze with the canned diced tomatoes and simmer the sauce over low heat.

Meanwhile, cook the spaghetti al dente and save 1dl of cooking liquid for later.
Dice the eggplants and fry in olive oil.
Season them again with a mix of the dry spices.
Once the eggplant is cooked, mix the cubes with chopped leaf parsley and the toasted almond flakes.

Mix the spaghetti into the sauce. Divide the spaghetti and the mix of eggplant cubes among the plates.
Finally, finish with some fresh basil
