400ml coconut milk
400g miss perfect tomatoes
100g baby spinach
2 stalks of lemongrass
piece of fresh ginger (approx. 5x5cm)
2 cloves of garlic
the spices
1/2tl turmeric
1/2tl paprika
1/2tl chili flakes
salt and pepper

Roadmap

  • Fry the salmon fillets crispy in olive oil. 
  • Season them with salt and pepper.
  • She then she aside for a moment.
  • Finely chop the ginger and garlic. 
  • Sauté these in the same pan you sautéed the salmon in. 
  • Cut the miss perfect tomatoes into 2 and sauté them along with the baby spinach. 
  • Cut the lemongrass lengthwise and add it.
  • Season with all the spices and then deglaze with the coconut milk.
  • Simmer over low heat. 
  • Before serving, place the salmon fillets in the pan with the sauce for another five minutes.
  • Serve with a bowl of rice.
