For the muffins

375 g self-rising flour

1/2 tsp baking powder

1/2 tsp salt

2 eggs

Grater of 1 lemon

2 tbsp lemon juice

125 g granulated sugar

100 ml oil

2.5 dl yogurt

100 g yogurt

100 g blueberries

For the crumbly topping layer

50 g butter

2 tbsp flour

2 tbsp sugar

Whipped cream or sour cream (for finishing)

Roadmap

Preheat the oven to 210°C.
Cut 12 squares from baking paper that are slightly larger than the muffin molds. Push them into the molds.
Mix the flour with the granulated sugar, baking powder, salt and eggs.
While stirring, add the yogurt, oil, lemon zest and juice and mix until smooth.
Now add the blueberries and stir gently.
You make the crumbly topping layer by mixing the cold cubes of butter with the flour and sugar until they form an evenly granular whole.
Fill the muffin molds with the batter until almost completely filled. Sprinkle some of the crumbly topping on top, bake first for 3 minutes at 210°C. Reduce the oven temperature to 180°C and continue baking for another 20 minutes.
Remove the muffins from the mold and let cool.
Finish with some whipped cream or sour cream.
