100 g melted white chocolate

3 egg yolks

10 cl milk

1 leaf of gelatine

250 g cream

3 egg whites

for the mascarpone

250 ml cream

2 leaves of gelatine

60 ml honey

2 egg yolks

250 g mascarpone

General:

1 box of kiwi berries

1 banana

1 lime

Roadmap

For the mascarpone:

Boil the cream with honey, remove from the heat and stir in the egg yolks very quickly.
Then mix in the soaked gelatine and, when the mixture has cooled, add the mascarpone.
Mix well and pour out into flexible moulds.
Freezing and demoulding.

For white chocolate:

Melt the chocolate and mix in the egg yolks.
Soak the gelatine and in the meantime heat the milk, then add the gelatine and stir it into the chocolate with a whisk.
Whip up the cream halfway and the egg whites (until snow).
First, very carefully fold in the cream and then add the egg whites in two batches.
Leave to set in the fridge and then transfer to a piping bag.
Finally, mix the kiwi berries with the banana and some lime juice into a coulis and sieve if necessary.
