- Place the pan over low heat. Stir well until the sugar is melted. By stirring, the strawberries release their moisture and you avoid caramelizing the sugar. Let simmer gently.
- Stir occasionally and simmer until the jam is syrupy. This takes about half an hour. If necessary, skim with a skimmer so that e gets a clear jam.
- Immerse the jars in boiling water for 5 minutes. Drain them upside down on a clean towel. Fill the jars and place them on a wet towel. Close the jars and invert them.
