Almond cake with kiwi berries

200g almond flour
80g vanilla pudding powder
6g baking powder
2 eggs
65g agave syrup (or honey)
1tl zest of orange (finely grated)
200g (firm) yogurt
2tl vanilla extract
3 tbsp (melted) coconut oil
kiwiberries

cake pan or springform pan (+/- 18 to 20cm)

Roadmap

  • Preheat the oven to 170°C.
  • Line the bottom and sides of the cake or springform pan with baking paper.
  • First, mix the dry ingredients namely almond flour, pudding powder and baking powder.
  • Cut the kiwi berries into 2.
  • Put the wet ingredients in a mixing bowl (of your food processor if you have one) namely eggs, agave syrup, zest, yogurt, vanilla extract and melted coconut oil. 
  • Blend this mixture into a smooth porridge for one minute. 
  • Add the dry ingredients and mix on low speed until everything is blended. Do not mix for too long. 
  • Spoon half of the dough into the mold and spread well, covering the bottom. Sprinkle half of the sliced kiwi berries in between.
  • Spoon the rest of the dough into the baking pan and spread the remaining kiwi berries and almond shavings over the baking pan. 
  • Bake the cake for 40 to 45 minutes so that it turns a nice golden brown. 
  • Use a skewer to check if the cake is cooked inside. 
  • Finally, let the cake cool completely.
