Roadmap

  • Butter a cake pan and dust with flour.
  • Cut open the vanilla pods and scrape out the pith with a sharp knife.
  • Bring the milk to a boil. Add in the vanilla marrow and the sticks.
  • Remove the pan from the heat, cover the pan and let steep for 30minutes.
  • For 10 minutes, mix the 220 g of butter in a food processor with a flat dough hook until it forms an airy cream.
  • Add the almond powder and mix lightly. Replace the dough hook with a whisk.
  • Gradually add in the clarified butter.
  • Then sprinkle in the powdered sugar and add the egg yolks little by little and then the eggs. Allow the mixture to beat lightly for 2 minutes.
  • Sift the milk and add to the batter.
  • Meanwhile, beat the egg whites in a fat-free bowl. Add the granulated sugar little by little as the egg whites become frothy and white.
  • Using your hand, spoon the beaten egg whites under the batter, then spoon in the flour.
  • Put the batter in a piping bag and fill the cake pan to about half.
  • Put some strawberry jam in the cake pan and continue filling the pan with the remaining batter.
  • Never fill the tin beyond 2/3 full. Preheat the oven to160°C.
  • Bake the cake for 30 to 40 minutes in the preheated oven.
  • Carefully remove from the mold and allow to cool. Garnish with the strawberry jam.
