1/4tl salt

1/4tl cinnamon

168g melted butter

100g of sugar

50g light brown sugar

1tl vanilla extract

1tl lemon zest

For the berry filling

425g berries

150g of sugar

1/8tl salt

3 tbsp cornstarch

1tl lemon zest

1/2 tsp lemon juice

Roadmap

Preheat the oven to 175 degrees.
Line a 20x20cm baking pan with baking paper.
Combine flour, baking soda, salt and cinnamon in mixing bowl.
Add the melted butter, sugar, vanilla extract and lemon zest and mix until uniformly combined.
Keep 220g of this dough aside for the crumble and cover the bottom of the baking pan with the remaining dough.
Bake for 15 minutes and then let cool.
Meanwhile, bring all the ingredients for the berry filling to a boil in a saucepan.
Let it cook for a few minutes until the berries begin to disintegrate.
Then turn down the heat and continue simmering until the filling has thickened.
Then let the mixture cool for 10 minutes.
Spread the filling over the bottom and sprinkle the crumble on top as well.
Bake in the oven for 40 minutes.
Before you want to cut the bars, put the baking pan in the freezer for 15 minutes.
