For the coulis, heat 150 g strawberries, 50 g blueberries, 50 g sugar and 5 cl water in a saucepan. Let it simmer for a few minutes over a gentle heat.
Then mix to a smooth coulis with the hand blender.
Scoop the balls of ice cream and divide them between the plates.
Divide the rest of the strawberries and blueberries among the plates.
Finish with the coulis, a few mint leaves and some finely chopped pistachio nuts.
