- Place the eggs and egg yolks in a mixing bowl. Stir the eggs and mix in the pecorino cheese. Season to taste with salt and pepper.
- Meanwhile, cook the pasta in salted water. Make sure the pasta is al dente and save a cup of the cooking liquid for later.
- Cut the tomatoes into small cubes and sauté in a pan with olive oil. Season with salt, pepper and some chili oil (or chili flakes). Also add the tomato paste and stir well.
- When the pasta is al dente mix it under the tomatoes in the pan. Also add a dash of cooking liquid. Stir everything well. Turn off the heat and mix in the egg mixture until the pasta is creamy.
- Finish with some more pecorino and chili oil for a spicy touch.
