We would almost call it an ancient recipe, yet the fresh taste of this dish manages to surprise you every time. As an appetizer, these glasses of tomato with shrimp are a wonderful start to a dinner party, with a creamy, sweet and fresh combination of ingredients.
Finely dice the banana shallots and place them in a mixture of the olive oil and both types of vinegar, seasoned with a pinch of salt.
Peel the shrimp.
Immerse 12 Miss Perfect Délice cherry tomatoes in boiling water for 10 seconds (without cutting them beforehand).
Scald them for 1 minute in ice water - or rinse them under cold running water - and remove the skin.
In each glass, place 3 peeled tomatoes.
Using a piping bag or teaspoon, add 2 tufts of sour cream.
Add 1 teaspoon of marinated banana shallot, cut the 4 remaining tomatoes into 2 and divide among the 4 glasses.
Top with the shrimp, chopped chives and a tuft of dill.
