- Dice the tomatoes and marinate them in olive oil with salt and pepper. Set these aside for later.
- Dice the zucchini and sauté in olive oil. Make sure the pan is hot so you can fry the zucchini cubes until golden brown. Season with salt and pepper.
- Meanwhile, cook the gnocchi until done. Drain it and cook it in the pan with the zucchini for a while. Add the pesto and cream. Stir until combined. You can always make the sauce extra cheesy by adding more Parmesan cheese.
- Divide the gnocchi among the plates and spoon the tomato salsa on top. Finish with additional Parmesan cheese and fresh basil, if desired.
