90g cornstarch

35g cocoa powder

2 tbsp water

8 eggs

200g granulated sugar

1 container of red berries

1 container of blueberries

1 container of raspberries

1 container of blackberries

Roadmap

Preheat the oven to 180 degrees.
Separate the whites and yolks of the eggs.
Beat 150g granulated sugar together with the 8 egg yolks using a mixer.
Mix 50 grams of granulated sugar with 8 egg whites until stiff in another mixing bowl.
Weigh the cocoa powder, cornstarch and flour into a third mixing bowl.
Fold the beaten egg whites under the beaten egg yolks
Spatula the dry ingredients evenly under the mixture.
Wash the berries in very cold water.
After this, let the berries rest in the colander for a while.
Dry the berries very gently with a towel.
Cut the blackberries in half.
Grease the baking pan with butter and then flour the pan.
Pour the batter into the baking pan and spread the berries on top.
Bake the batter for +/- 35 minutes in the oven.
Let the sponge cake cool and then cut it into equal pieces.
Optional: When serving, finish with melted chocolate and some more fresh berries.
