1 sachet of vanilla sugar

2 egg yolks

2 egg whites

60 g sugar

60 g pistachio nuts

200 g strawberries

Roadmap

Blend the pistachio nuts into a crumb.
Separate the eggs.
Beat the egg yolks together with the sugar to a smooth mixture that is slightly lighter in colour.
Beat the mascarpone and mix it with the egg yolks.
Add the vanilla sugar.
Beat the egg whites until stiff and fold them into the mixture.
Finally, stir the crushed pistachios into the mascarpone cream.
Remove the crowns from the strawberries and cut the strawberries into pieces.
Divide the strawberries and the mascarpone cream over the glasses and finish with some extra pistachios if you wish.
