- Preheat the oven to 180°C. Put the cherry tomatoes in an oven dish and season with olive oil, pepper, salt, dried oregano and one teaspoon of honey. Roast the cherry tomatoes in the oven for about 20 min.
- Meanwhile, finely chop the garlic and onion. Set these aside for a moment.
- Fry the chorizo with a dash of olive oil until crispy in a hot pan. Then add the onion and garlic. If you like spicy, now add some chili flakes as well. when the onion is glazy, stir in the tomato paste. Stir everything together well. Then deglaze with the passata. Let everything simmer on low heat. Season with a pinch of salt if necessary.
- Meanwhile, cook the pasta al dente in salted water. Mix the cooked pasta under the tomato sauce. Also stir in half of the roasted cherry tomatoes and use the other half for garnish.
- Finally, stir in the Parmesan cheese under the pasta.
- Divide the pasta among the plates and top with some fresh basil leaves.
