1 tsp paprika
3 anchovy fillets
½ glass of white wine
100 ml vegetable stock
Pepper and salt
125 g ricotta cheese
60 g black olives
250 g spaghetti
1 tsp za'atar
Olive oil

Roadmap

  • Peel the peppers and cut them into cubes.
  • Chop the garlic and onion finely.
  • Fry everything in a dash of olive oil.
  • Add the paprika and the anchovies. Bake for 1 minute.
  • Add the wine and 2 minutes later the stock. Leave to simmer on a gentle heat.
  • Add the ricotta and mix everything into a fine sauce.
  • Season with pepper and salt.
  • Cook the spaghetti al dente.
  • Cut the black olives into pieces.
