For the yogurt cake

240g natural yogurt

2tl lemon zest

80ml lemon juice

1.5tl vanilla essence

230g butter (at room temperature)

400g of sugar

3 eggs

350g self-rising flour

300g kiwi berries + extra to decorate

3 tbsp. syrup or jam (optional)

100g white chocolate

Roadmap

Preheat the oven to 170 degrees.
Grease the cake or springform pan with butter, then flour the pan.
Mix well the yogurt, lemon zest, lemon juice and vanilla essence.
Next, cut the kiwi berries in half.
Mix the butter and sugar in a mixing bowl until creamy and fluffy.
Then add the eggs incrementally until you have a nice batter.
After this, alternately add the flour and the yogurt mixture.
Mix this mixture into a nice smooth dough.
Finally, add the kiwi berries, gently mix them under the dough with a spatula.
After this, pour half of the dough into the cake pan
Then spread some of the syrup/confection over the dough (optional).
Finally, pour the rest of the dough into the cake pan
Bake the cake in the oven for 55 to 65 minutes until it is golden brown in color and cooked on the inside.
Let the cake cool, and finish the cake with melted white chocolate and additional kiwi berries.
