- Dice the pastèque and cucumber and place in a large mixing bowl.
- Squeeze the juice of 2 limes over it and add the pomegranate seeds.
- Stir everything once well.
- Roll the fresh mint leaves and cut fine strips from them. Sprinkle these over the cucumber and mini watermelon.
- Divide the salad among the plates and crumble the feta over it.
- Finally, finish with some olive oil, honey and balsamic to taste.
TIP: The salad is most delicious when it is well fresh!
