150g oatmeal

6g baking powder

1 pinch of cinnamon

110g Greek yogurt

2 eggs

50ml olive oil

50g coconut blossom sugar (or regular sugar)

3 to 4 drops of almond extract (optional)

fresh raspberries, blackberries and/or blueberries

Roadmap

Preheat the oven to 175 degrees.
Finely chop the dark chocolate, do not chop them too big to prevent them from sinking down during baking.
Then grind the oatmeal in a blender, try to get this as fine as possible.
Mix this oat flour with baking powder and cinnamon.
Next, take a large mixing bowl, in which you stir or mix the yogurt eggs, olive oil, coconut blossom sugar and optionally some almond extract until smooth.
Next, add the oatmeal mixture to this.
Mix it all together well.
Finally, add the chopped chocolate to the mixture and spread the chocolate through the mixture while stirring.
Divide the dough among the molds and press two to three berries into the dough in each mold.
Bake the muffins in the oven for 25 minutes until golden brown.
Let the muffins cool for 10 minutes before removing them from their molds.
Finally, let them cool completely.
