running caramel or chocolate spread
2 trays of red berries
1 container of blueberries
fine granulated sugar
coarse granulated sugar
1 egg yolk

Roadmap

  • Preheat the oven to 200 degrees.
  • Wash the berries in very cold water.
  • Leave the berries in the colander for a while.
  • Dry the berries very gently in a clean towel.
  • If the blueberries are much larger than the red berries, cut them in half. This is important for the cooking time.
  • Put the berries in a deep plate or in a bowl. (Keep some berries aside to finish).
  • Gently stir two tablespoons of fine sugar into the berries.
  • Next, roll out the puff pastry. When doing this, be careful not to throw away the baking paper from the puff pastry!
  • Using a knife, divide the puff pastry in half. (Do not cut all the way through!)
  • Coat the puff pastry with caramel or chocolate spread. (stay 1cm from the edge)
  • Using a fork, poke holes in one half of the puff pastry.
  • On the side of the holes, spread the berries over the paste. (stay 1cm from the edge)
  • Fold in the puff pastry.
  • You may cut off the baking paper that is now exposed.
  • Place the puff pastry on an oven tray and work the edge with a fork.
  • Coat the top of the puff pastry with egg yolk.
  • Sprinkle coarse sugar on the top of the puff pastry.
  • Finally, bake for about 20 minutes at 190 to 200 degrees Celsius until golden in the oven.
