Oat pastry with kiwi berries

1 very ripe banana (peeled 100 g)
50 g oatmeal (or more precisely half the mass of the peeled banana)
50 g dark chocolate (I use chocolate with 70% cocoa)
1 tub of kiwi grapes (125 g)
a handful of coconut flakes
150 g Greek yoghurt (or another thick yoghurt)
½ tsp stevia powder (or other sweetener to taste)

Roadmap

  • Preheat the oven to 180°C.
  • Mash the banana with a fork and stir in the oatmeal until everything is well mixed.
  • Prepare a baking tray lined with baking paper.
  • Roll five balls of the mixture with your hands and press them into discs about a centimetre thick.
  • Put the cakes in the oven for 15 to 20 minutes, until they turn golden brown. They will not become crispy, but remain soft, like a cake.
  • Let them cool down completely.
  • Melt the chocolate au bain marie and leave to cool for a short while.
  • Remove the tails and stalks from ten kiwi berries and dip them in the melted chocolate.
  • Prepare a plate, lined with baking paper.
  • Shake the kiwi berries around in the chocolate until they are completely covered, spoon them onto the baking sheet using two forks and place in the fridge for at least 15 minutes.
  • Mix the Greek yoghurt with the stevia powder.
  • If necessary, put the yoghurt in a piping bag or a freezer bag and cut off one corner to dress it easily. You can also use a spoon.
  • Roast the coconut flakes briefly in a dry pan until they turn golden brown.
  • Halve five kiwi grapes, leave the rest whole.
  • Divide the yoghurt between the five oatmeal molds, arrange a few (halved) kiwi fruit pralines on each one and finally sprinkle the coconut flakes on top.

Tips

  • Even more delicious and special by spooning the pulp of a passion fruit through the yoghurt
  • It is also suitable for breakfast. The oatmeal provides slow carbohydrates and proteins. The protein, yoghurt, coconut flakes and dark chocolate provide protein and fat. Furthermore, the banana and kiwi berries provide natural fast sugars, vitamins and minerals. Count 2 to 3 pastries as a portion.
